But a pizzeria &quot;Pizzeria Drago Verde&quot; about 80 kilometers south of Rome takes this classic and adds truffle and speck (a spicy prosciutto) which stand up to the truffle a bit better than prosciutto.   Also, they make a pizza with lard &quot;Lardo di Colonnata&quot; on oven roasted patatos... thin slices of lard laid on a freshly made pizza... the lard melts and ...let me tell you.... Hugh!
