3 fantastic options--love the diversity. I often find myself in a rut, adding olive oil, garlic, s&p to everything or it's a run of coconut milk, fish sauce, curry paste... kudos to you for mixing it up. i am now bean inspired.

mmmmmm RANCHO GORDO.

sometimes i hate to talk them up because then they run out and i don't get, say, eye of the goat or good mother stallard.

to those who "save" them - i used to do that but now i have about 18 jars of RG beans on the shelf. any time i remember to put the beans to soak in the morning i make them later. the best refrieds i've ever had were leftover RG beans, they also are genius for the middle layer of an enchilada casserole. there's no bad way to have them and as long as there is flat rate shipping you can stock up and buy christmas presents for the less than it would cost you to go to the farmers market.

oops. what was i saying about not talking them up? hahahha. love them, love steve sando, love that they are heirloom.

i'm planting some yellow eye any minute!

I gotz to gitz me some of those beans from Rancho Gordo! I love beans of all kinds and those look so much better than anything commonly available in stores. Beans are such a staple food that many people seem to be lulled into thinking that the quality is negligible. It’s not and we all need to be reminded so the demand for quality products like Rancho Gordo beans will increase. I’ve never really thought about using sweet potatoes in a stew and didn’t know such a thing as pine syrup existed. Your “every day kind of food” is pretty remarkable Claudia.

This post is just great, inspiring in fact, making me want to cook up some beans right now.
The beans you are cooking with are just beautiful, I love the mottled calypso beans and those christmas lima beans are wonderful. 'They just become whatever they were meant to be on that day' - my kind of cooking.

I think a LOT of people will want to rethink any prejudices they might have towards bean and legumes with the economy as it is. They are healthy, really inexpensive and substituting legumes for meat puts less stress on the environment too.

This is a great theme to run with. Thanks for sharing!

Growing up I always thought of beans as Poor Man's Food. However, since we were poor that all kinda made sense....and now that I'm back to being poor again, I have redeveloped my proclivity for using all manner of legume.

And pine syrup? I would like some. Your pantry fascinates me.

Rancho Gordo -- seriously good food.
And lately, the idea of a pot of beans can send me reeling with delight. Not sure why. But that tepiary bean pot (meat popsicle and all) is making me drool!

I certainly eat a lot more beans (to include lentils and peas) than I grew up with. I do a lot of sausage and the pork bones either end up in the center of a pot of soup or I make stock. One of the best soups came from the bone of a home dry cured ham.

I saw you over on Hunter-Gardner and if you are interested in other charcuterie/offal sites I have several, including a Canadian pro who posts some recipes.

I have you and Jennifer to thank for getting me to buy RGs originally (I'm pretty sure). They're still the best. I have two bags of black right now and I'm trying to save them until I am absolutely sure about the recipes I want to make with them because black are my FAVORITE beans. Anyway.

I love your soups, stews and bean meanderings. I'm especially amused at your veal-sicle.
