crab ragout over squid ink pasta

a can of jumbo lump crap had been impatiently sitting in the fridge until the expiration date finally started to glare at me. and the pasta, this exquisite squid ink pasta called "calamarata nero di seppia" had been taunting me from my pantry for a couple of months. so one night while poking around in my kitchen for dinner, i figured i had a solid match and i proceeded forward. i sauteed some onions and garlic in olive oil, added a can of crushed san marzano’s, a healthy glug of sherry vinegar and some dried tuna bottarga along with fresh marjoram. i added the crab at the very end and it was finished with a long shot of my coveted and currently most favorite olive oil, l’estornell.

the overall dish was quite good but -

the it was the visual that was really working for me…

    That looks delicious!!!!

    When I first saw the headline on my feed, I was thinking that you used one of those ink packets that you get in paella kits. Silly me!

    This is one to try for sure.

    Interesting. The completed dish looks tasty, but the black noodles look a bit ominous. Where on earth do you get squid ink noodles?

    Sounds wonderful, and the pictures are beautiful. I think I like it best that the squid ink pasta actually looks like calamari.

    donald – no packets. just a bag of heavily attituded pasta.

    dan – it’s not really a recipe. it’s like a throw together that worked… poke around and see whatcha got lying around and then throw it on some spaghetti!

    I’ve got one of those cans in my refrigerator as we speak. This sounds and looks wonderful. I love squid ink pasta. You’re rockin’ this year with the food blog, honey! Excellent as ever.

    Claudia, I love that the squid ink pasta is also shaped like little calamari rings! And you’re right, it is very photogenic. Great job!

    I have never heard of this pasta. What does it taste like?

    The texture, in the pictures, almost looks rubbery, but I’m sure that’s not the case. Are you sure you didn’t sneak into your garage and take pictures of some rubber washers from Cary’s toolbox? haha

    Just kidding, I’m sure it tasted great. Anything seafood related, I love.

    tara – like spinach pasta, the coloring is tasteless – but very cool to see… it’s all texture and how it catches the sauce. i used the leftovers with just some truffle oil and cheese. it was wonderful for lunch the next day. but i live for pasta….
