claudiacita:

The Beloved just came back from a 10-day silent mediation retreat. I just showed her this blog entry, and her cannibal self came back with a vengeance.

I'm gonna have to go and score dem bones, ot at least a one-pound tenderloin.

I love marrow. Have you tried making dumplings with it, or using it as a ravioli filling? Or just rubbing it on someone you love?

JAFAR - I saw shorter ones at "publix"
- like an inch tall at the most - it's my local supermarket -they just called them soup bones
but I got these at whole foods. it may not be something they have all the time so i'd just call them.

good luck!

lifeinrecipes - lovin' your comment! please report back on whatcha thought!

ponyboat - sounds like a bad country song...

donald - mine were beef. from the middle part of the leg. 3" is the suggested size. veal is supposed to be the better way to go. but beef are fine.

robin - ya think? i'm just trying to make up for years of not paying close attention!

mary - ummm, errr - absolutely not!

vincent - i've got that book too and the pic of anthony makes my knees go weak.

cookie - precisely why i overdid mine. i kept expecting the bones to streak or change color. because i had no experience with what the hell i was doing!

robert - the marrow and i have an open relationship and i was very upfront and clear to the foie...

jennifer - go getcha some, girl!

amy - decadent, at the very least.

Claudia, what kind of bones are those?

“but i was drinking very good red wine – heavily – so i am not to be blamed…”

Hmmmm…seems to me that I’ve been here before. It’s a timing issue…food getting done before I get done is usually a good thing.

Never even thought about eating bone marrow directly. I’ve let it melt out of shanks into a dish, but that’s about it.

Claudia you are always so "in" with all the fashionable foods! I've been hearing about marrow bones a lot lately but haven't tried them yet. I'd bet I'd be more of a marrow girl than a foie gras girl.

Bourdain used this recipe in the book "My Last Supper" in which he describes it as his last meal wish on earth. The book is great - it has a pic of Fergus on the back holding a pig's head - hehe. Your's look great Claudia!

Yours came out so pretty; mine got scorch marks on the bones (which, come to think of it, I rather liked).

Uh,…… bad news kid, the Foie was reading over my shoulder and is now incensed. I tried to switch screens, too late. Be very, very careful around it.
