i just needed to simply and quickly tell you that i made these muffins and they were gone in one day. a solid dozen. gone for good – goodbye. cary had 5. yes, five. and i even forgot to brown sugar the tops as per the recipe. but then they might have been gone in half a day. and well, the cold hard reality of that would’ve been a bit hard to take.
the night before, i measured and mixed all of the dry ingredients. the butter was left out so it’d be at perfect consistency - with the egg right beside it. the next morning while the coffee was brewing, the batter got thrown together and the muffin tin was popped into the oven in no time flat. and within 20 minutes- voila! hot apple muffins were being enjoyed by all. and we rejoiced and sang, while gleefully dancing around the table. maybe.
the recipe came from ‘smitten kitchen‘. again. (hi deb. love ya. mean it)
whole wheat apple muffins
adapted from king arthur flour
1 cup (4 ounces) whole wheat flour
1 cup (4 1/4 ounces) all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon cinnamon
1/2 cup (1 stick, 4 ounces) unsalted butter, at room temperature
1/2 cup (3 1/2 ounces) granulated sugar
1/2 cup dark brown sugar, packed
1 large egg, lightly beaten
1 cup (8 ounces) buttermilk or yogurt
2 large apples, peeled, cored, and coarsely chopped
Preheat the oven to 450°F. Grease and flour an 18 cup muffin tin and set aside.
Mix together the flours, baking powder, baking soda, salt, and cinnamon, and set aside. In a separate bowl, cream the butter and add the granulated sugar and 1/4 cup of the brown sugar. Beat until fluffy. Add the egg and mix well; stop once to scrape the sides and bottom of the bowl. Mix in the buttermilk gently (If you over-mix, the buttermilk will cause the mixture to curdle.) Stir in the dry ingredients and fold in the apple chunks.
Divide the batter evenly among the prepared muffin cups, sprinkling the remaining 1/4 cup brown sugar on top. Bake for 10 minutes, turn the heat down to 400°F, and bake for an additional 5 to 10 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool the muffins for 5 minutes in the tin, then turn them out onto a wire rack to cool completely.
these really were a huge crowd pleaser. from the nutty earthiness of the ww flour, along with the not too sweet cakey bread and the generous amount of big chunks of apples – these were overall a really exceptional muffin that i would make over and over to the delight of all the peoples.
next time i may even forget the brown sugar topping again…

Made these last Sunday after I had read the recipe and you had told me to make them. I take direction well. Groom thought he had woken up in the wrong house..I never make muffins. They are so easy…and yes, I forgot to do the brown sugar thing as well. I didn’t have buttermilk, so I used Greek yogurt. They were divine!

Agree with Michelle – looks too perfect! Muffins should only last a day, in my estimation. Otherwise, you have to go splitting and buttering them the next day to keep ‘em moist. Not that there’s anything wrong with that, either.

These look a lot like my Orange and Cranberry Scuffins, a cross between a scone and a muffin. They have that same glossy exterior.
